Celiac disease is an immune disease in which the consumption of gluten leads to an immune response in the small intestine. The gluten damages the villi of the small intestines and prevents it from absorbing nutrients.
As a result, people with this disease have to remove gluten from their diet. Gluten is a family of storage proteins, found in cereal grains such as what and barley. Luckily, the increasing awareness of gluten intolerance has led to greater gluten-free options, allowing for greater convenience and variety even when following such a diet.
